This recipe is not only one of the easiest to make, but also one of my favorites and was a big game day hit.

Ingredients:

  • 1 package Jenni O Lean Ground Turkey
  • Fresh Spinach
  • Organic Creamery Mild Cheddar
  • Fresh Salsa (I make myself)
  • chopped tomatoes
  • cilantro
  • onions
  • salt n pepper
  • RW Garcia MixtBag tortilla chips (gluten & certified GMO free)

I start making the salsa first because I like to sauté then throw in fridge for a bit before I use.
Take 1/3 cup onions, 1/4 cup cilantro & sauté till soft. Throw in tomatoes with salt n pepper, sauté a little longer then leave to simmer on low covered for few minutes more. You don’t want to over cook. I put contents in bowl and stick in fridge for 15 minutes.

Lay chips on flat pan, cover with spinach, add salsa and cooked turkey meat, top with cheese & I add jalapeño’s as well & sometimes avocado.

I place in oven at 325 for about 8-10 minutes and what a perfect super tasty snack or meal it turns out to be.
