GlutenFree S’mores

On my recent camping trip, making s’mores was all I could think about. What camping trip is complete without them?! The problem w/ gluten-free s’mores and camping for me is finding GF graham crackers to go with it. So, this time I decided to use Kinnikinnick Foods GF Ginger Snaps with Godiva Milk Chocolate Salted Caramel & Marshmallows.

I took my special s’more spike and added the first marshmallow, a piece of chocolate, another marshmallow, a little more chocolate, then lightly patted the cookie on the tip of the spike to top it off. I put it all in the fire and let it catch a flame till my marshmallows were a bit blackened – my preference – then took another cookie and slid it all off to make a s’more sandwich…. Mmmm.

All in all these were big hits with even the non gluten-free crowd as they quickly finished every last crumb, leaving the poor Hershey’s Chocolate & regular graham crackers lonely for the rest of the eve.

Hi, I’m Kirsten

Kirsten is a Registered Dietician in training, pursuing certification towards becoming a Registered Dietitian, and a Gluten Free Nutrition Consultant.
