Love Pierogi’s? Here are 3 AWESOME Gluten Free Recipes

Today is National Pierogi Day , here are three new recipes.

I love pierogies! Growing up with my Russian great grandma and grandma, they would make them all the time. Sometimes they’d stuff them with meat n cheese, sometimes with sauerkraut. But my favorite were the potato n onion and my grandma would add in fresh garlic chives from her garden. Yesterday on Twitter someone reminded me of how much I missed them, so I have found three different gluten free perogi recipes for you from:

 

GF Jules

2 cups gfJules™ All-Purpose Gluten-Free Flour
1/2 tsp. salt
1/4 cup extra virgin olive oil
1 large egg
1/4 cup sour cream, dairy or non-dairy alternative (soy sour cream or plain coconut yogurt)
1/4 cup +/- very warm water

The Gluten Free Vegan

Ingredients
1 cup sorghum flour
1 cup chana (chickpea) flour
½ cup tapioca starch
½ cup corn starch
2 teaspoons xanthan gum
¼ teaspoon salt
2 cups vegan sour cream*
4 medium potatoes, peeled and cubed
¼ cup unsweetened plain almond milk (or non-dairy milk of your choice)
½ teaspoon salt
2 onions, diced finely
½ cup vegan margarine

 

The Baking Beauties

1/2 cup cream-style cottage cheese
1 large egg
1/4 cup milk
1 tablespoon oil
1/2 cup brown rice flour
2 tablespoons sweet rice flour
2 tablespoons potato starch
1/4 cup tapioca starch
1/4 cup cornstarch
1 teaspoon xanthan gum
1/2 teaspoon salt
Filling of your choice
Brown rice and/or sweet rice flour for sprinkling on counter
