My Late Afternoon Gluten Free Lunch

My late lunch for today consists of:

– one can of coconut milk
– 3 generous scoops Thai red curry
– 5 shakes of GF fish sauce
– Bok Choy
– 1 cup Broccoli
– 1/2 Orange bell pepper
– 4 cloves fresh garlic
– 4 carrots
– 1 tsp fresh ginger
– organic chicken
– rice

*there’s no specific recipe I have, but I start with bringing coconut milk, curry sauce, fish sauce & garlic to a boil. I add veggies and chicken, let boil for 5 minutes covered then reduce heat to simmer for 5 still covered, then turn off heat but keep on stove to stew in juices for another 5.     1. And so easy to make. I love cooking with coconut milk. I use light coconut milk so the broth isn’t as heavy as with regular.
