GF Coconut & Rum Bundt Cake

Ingredients:

2 cups all purpose GF flour
1 teaspoon baking powder
A pinch of salt
1 cup unsweetened coconut milk (stir well before measuring)
½ stick (4 tablespoons) unsalted butter cut into 4 pieces
4 large eggs at room temperature
2 cups sugar
½ teaspoon vanilla extract
4 tablespoons dark rum
¾ cup unsweetened toasted coconut

 


Coconut Lime Margarita

Ingredients:

1 to 1 ½ ounces silver tequila
1 ounce simple syrup
1 ounce fresh squeezed lime juice
2 tablespoons coconut milk* (found in cans with the cocktail mixers)

 


Coconut Banana Pancakes

* 1 cup GF oat flour
* 2 teaspoons baking powder
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon fine sea salt
* 1 very ripe banana
* 1 tablespoon plus 1 teaspoon raw cane sugar or muscovado sugar
* 1 large egg, preferably organic and free-range
* 3/4 cup coconut milk (I use organic light coconut milk)
*1 tablespoon organic coconut oil, plus more for cooking the pancakes
* Butter, for serving
* Maple syrup, for serving
* sliced banana for garnish-optional
